<p>2 cups apricot juice or nectar</p>
<p>&frac12; cup honey simple syrup*</p>
<p>2 cups seltzer</p>
<p>1 cup mint leaves, loosely packed</p>
<p>ice</p>
<p>In a large pitcher, combine the apricot juice and honey simple syrup. Add the seltzer and mint leaves. Stir until well blended. Serve immediately over ice.&nbsp;</p>

<p>1 cup water</p>
<p>1 cup sugar</p>
<p>&frac12; cup honey&nbsp;</p>
<p>In a small saucepan, bring the water, sugar and, honey to a boil. Stir continuously, until the sugar and honey are completely dissolved.
