Meyer Lemon Salsa

yield: 1 cup salsa

 

1/3 cup chopped red onion

2 tablespoons fresh chopped parsley

1 tablespoon fresh chopped cilantro

1 tablespoon jalapeno, finely chopped

1/3 cup extra virgin olive oil

4 lemons, peeled and segmented

salt and pepper to taste

 

In a small bowl, mix together the onion, herbs, jalapeno, olive oil, lemon segments. Season with salt and pepper. Let sit for 10 minutes to let flavors combine.

Use the salsa on top of chicken, grilled fish or in a salad.
