Meyer Lemon Salsa

yield: 1 cup salsa

 

1 large red onion, chopped

small bunch fresh parsley, chopped

small bunch fresh mint, chopped

1/2 cup extra virgin olive oil

3 meyer lemons, peeled and segmented

1/2 meyer lemon, juiced

salt and pepper to taste

 

In a small bowl, mix together the onion, herbs, olive oil, lemon segments and lemon juice. Season with salt and pepper. 

 

Use the salsa on top of chicken, grilled fish or in a salad.
