½ cup diced pineapple
½ red onion diced
½ jalapeno pepper seeded and thinly chopped
finely grated zest and juice of 2 limes
salt and freshly ground black pepper
4 hot dogs
¼ cup cilantro leaves
In a large bowl combine pineapple, onion, jalapeno, juice and zest. Season with salt and pepper. Set aside.
Preheat grill to medium-high heat and place hot dogs on grill, flipping occasionally. Grill hot dogs until cooked through. Assemble with bun, top with salsa and cilantro.
BLT Hot Dog with Green Goddess Sauce
4 slices bacon
4 hot dogs
1 head bibb lettuce, torn into pieces
½ pound heirloom baby tomatoes, halved
green goddess sauce (recipe follows)
Wrap one piece of bacon around each hot dog and secure with a toothpick. Set aside.
Preheat grill to medium-high heat and place hot dogs on grill, flipping occasionally. Grill hot dogs until cooked through.and bacon is crispy, about 5 minutes. Assemble with bun, top with sauce.
Green Goddess Sauce
1 cup mayonnaise
½ cup sour cream
½ cup fresh tarragon leaves chopped
2 tablespoons finely chopped chives
2 tablespoons lemon juice
salt and pepper to taste
In a bowl, mix together mayonnaise, sour cream, herbs, lemon juice and season with salt and pepper. Set aside.
