Makes 2 large smoothies
For the smoothie base:
4 cups greek vanilla yogurt
1 cup almond milk or lowfat milk
2 large bananas, sliced and frozen
¼ cup honey
For the strawberry layers:
3 cups strawberries, hulled and halved
2 tablespoons lemon juice
1 tablespoon honey
For the chocolate layer:
2 tablespoons unsweetened cocoa powder, plus more for dusting
2 tablespoons cacao nibs (optional)

Make the smoothie base: Place the yogurt, milk, banana slices, and honey in a blender, and puree until smooth. Divide the smoothie mixture into 3 bowls.
Make the strawberry puree: Place the strawberries, lemon juice and honey in a blender and puree until smooth. Transfer puree to a bowl.
Make the smoothie layers: To make the light pink strawberry layer, mix ¼ cup of the strawberry puree with one of the bowls of smoothie base.
To make the chocolate layer, mix the cocoa powder and cacao nibs with another bowl of smoothie base.
Assemble the smoothie: Pour 2 inches of the chocolate smoothie into the bottom of each glass. Slowly pour 2 inches of the strawberry puree over the chocolate layer. Carefully stick strawberries to the inside of each glass, in a ring pattern. Fill with 2 inches of the light pink layer, and then finish with the vanilla layer. Garnish with whipped cream, cocoa powder, pocky, and strawberry slices.
