2/3 cup long-grain white rice
1 (4-inch) piece Mexican cinnamon
4 (1-inch) strips lime zest
2 cups unsweetened shredded coconut, lightly toasted
1 teaspoon vanilla extract
Place the rice in a blender and process until coarsely ground. Transfer into a large container and stir in the cinnamon, lime zest, and coconut flakes. Stir in 4 cups hot water, cover, and let sit overnight.
Transfer the mixture to a blender and blend until as smooth as possible. Add 2 more cups of water, blend, and strain into a pitcher through a sieve, pressing the solids with the back of a wooden spoon. Stir in the vanilla and sweeten to taste with agave. Serve over ice. Option to add a splash of rum.
