Waking up and seeing the leaves change during Fall gets me excited for a day of being outside and enjoying nature’s beauty. Long jogs in the park one of my favorite outdoor activities this time of year. A breakfast of earthy buckwheat crepes filled with hearty sweet potato hash is the perfect way to fuel your body for a day of activity. For our hash, we used leftover roasted sweet potatoes, but leftovers from last night’s dinner fit the bill. Top with goat cheese and a fried egg, and you’re in business!
