The days are getting warmer and if you're in search of the perfect cocktail to quench your thirst, you've come to right place. This cactus cooler is part of my Ojai inspired menu and features aloe vera juice. These succulents grow in abundance all over California, and even though I've used it plenty of times to heal a sunburn it turns out there are plenty of nutritional benefits as well. It’s hydrating and rich in phytonutrients and packed with vitamins B, C, E, and folic acid. I've combined the juice with refreshing cucumber, mint and topped it off with bubbly ginger kombucha for extra zing. If you're looking to make this an after hours cocktail, try adding a splash of vodka.
