We all need a tropical get away from time to time, especially when sunny days still feel out of reach. On a recent trip to Tulum, I was inspired by its vibrant colors, fresh seafood and tropical flavors. One of my favorite thirst quenchers was an icy glass of horchata after a swim in the ocean.
The classic horchata is a Mexican rice milk consisting of broken rice that is soaked overnight in water with cinnamon and lime zest. I've added toasted coconut flakes for a nutty, creamy texture. Once it's done steeping, simply blitz it in a blender and strain it into a pitcher with a sieve. For the ultimate vacation vibe, add a splash of rum and transport yourself to the island of your dreams.
