To celebrate fall and the FeedFeed's new beautiful space in Brooklyn, we were invited by Vitamix to come up with a fun new recipe using their new Explorian Model. Nothing spells cozy like a heaping plate of fresh pasta on a fall day.
Homemade pasta sounds intimidating but you can save some time by buying pre-made sheets of fresh pasta at your local Italian deli. Blitz up a few cooked sweet potatoes with spices and lay out spoonfuls onto your pasta sheet. Add a little egg wash to the edges, top with another pasta sheet and seal them up into little pillows. Now you're ready to trim these out. I like using a pastry roller to make fancy crimped edges but you can use a knife as well. These raviolis cook through in just a few minutes and you'll notice them floating to the surface begging to be eaten when they're ready.
The finishing sauce is a glorious combination of nutty brown butter, sweet pecans and crispy herbs. Dig into a big plate of these on a chilly day and watch the leaves change color outside. Happy Fall!
