Now that we've wound our clocks forward, we are enjoying more sunshine and approaching my favorite time of year--Spring! After a long hibernation, I'm ready to entertain again and nothing's better than a brunch get together with friends.
Today, I'm sharing my favorite pancake dish from my cookbook. The secret is folding fresh goat cheese into the batter. The earthy flavors balance out the sweet blackberry compote that is drizzled over the hot pancakes. Enjoy this to share at your next brunch gathering!
