We're in the midst of summer and I wanted to make something easy to pack along for a day at the beach or on a picnic. One of my favorite beach snacks has always been Mexican chile-lime fruits from street vendors. My version is made from slices of watermelon, tossed in lime juice and sprinkled with chile powder and salt. Then simply dehydrate or dry out in the oven for 8-10 hours until you end up with a chewy, sweet and salty jerky. These healthy treats are a dose of summer in every bite!
