During the summer, there's nothing better than getting together with friends and firing up the grill. One of my favorite things to make is fresh grilled fish wrapped in herbs. I love this technique because it infuses the fish with flavor and protects the flesh of the fish at the same time. To make this dish extra special, I found beautiful flowering herbs: thyme, lavender, and chives at the farmer’s market. It can be daunting to grill fish but this is a simple and foolproof way to enjoy your fresh seafood. You can try it with branzini and even mackerel.
