I love having cold noodle salads for lunch, and when I do, I typically enlist soba noodles. Their chewy texture and nutty flavor lends itself well to being served cold. For this spring take on soba noodle salad, I used beautiful green matcha soba noodles. Combined with my favorite seasonal produce, the end result is a healthy, colorful, and delicious lunch.
