When I first discovered ramps, I wondered what all the hype was over these garlicky leafy bulbs. They tasted like delicate spring onions and could only be found during a short time at the farmer's market. Our ramp craze has never been stronger and these perennial wild onions can now be found at grocery stores as well.
Ramps are delicious when sautéed, roasted and pickled. One of my favorite ways to enjoy them are as a pizza topping along with fresh ricotta, and a runny egg. To make sure our egg doesn't overcook, our method is to fry it separately and serve it on top of our pizza right as it's coming out of the oven. Add a punch of color to this dish with a scattering of your favorite leafy greens.
