Ramps and fuzzy baby almonds are at the top of my list this time of year. You'll see them popping up at the farmer's markets for a limited time, so make sure to scoop some up.
If you haven't had fresh almonds before, you are in for a treat. They have a crunchy, sour exterior and a gelatinous almond center. They are deliciously addictive to snack on when dipped in flaky salt.
Ramps have a delicate onion flavor and are easy to saute quickly in a pan along with a pat of butter. Try spooning it over fresh cheese and toast. Top with an egg and you're in business!
