I spotted some beautiful garlic scapes at the farmers market the other day and thought they would be great to use for today's recipe. Garlic scapes come from the flowering stalks of hardneck garlic plants and have a unique bright green curly figure. They have a delicious mild garlic flavor and can be used for many ways from pesto to pickling.
I kept mine simple by sauteing them in olive oil with a little salt and pepper and serving them as a side with steak. The radish salsa gives bright flavors and a zing to this dish. Any leftover salsa can be served with tortilla chips
