There is something soothing about having a pot of beans simmering away on the stove when it's chilly out. Slow cooked legumes lend themselves as a base to many dishes, including this one for baked eggs. Have a couple of friends over, spoon the beans into ramekins and top each with an egg for a cozy and simple breakfast.
