My mind was blown when I had this tropical concoction at one of the beach resorts in Tulum. The color was a pop of vivid red, with the soft flavors of melon and a zing of lime. Why hadn't I had melon jams before?
A big reason we don't see these often on supermarket shelves is because unlike other fruits, melon has less natural pectin to act as a thickener for jam. But no fear, this is remedied with a helping of powdered fruit pectin. If you're a huge fan of tropical fruits like I am, you could try this with mango or guava as well.
This jam is runny enough to swirl into a bowl of yogurt and thick enough to slather on grilled pieces of toast. Perfect for mornings when you're fantasizing about your next beachy vacation.
