Pickled Ramps and Ramp Butter

After picking up several bundles of ramps from the farmer's market, we decided to give them a longer shelf life by pickling one batch and using the rest to make a compound butter. 

The sweet oniony flavor from the ramps are best paired with a freshly baked baguette, cured meats, and olives. Tossing everything into a basket makes for a delightful picnic in the park.
