When we spot the first bunch of ramps at the farmers market we see it as a beginning of a new season. They are the first fresh greens of the year. These wild growing plants are found in woodland areas and they belong to the green onion family.
We love the rich garlicky flavor of ramps that is brought out through roasting. So we decided to update the traditional Spanish almond soup, Ajo Blanco and replace the garlic with ramps.
