Weekend Getaway
We decided to get out of the city for some fresh air and headed upstate to a B&B for the weekend. The charming house, Suminski Innski has been lovingly restored by owner by Tim Voell. He became sole owner of the house when his wife Josephine died in 2009. She was a music teacher who was 2 months shy of her 100th birthday and had always dreamt of living in the house. Over the years Tim has given a new life to the house and has now opened it up to share with lucky visitors.
Tim made us an amazing breakfast during our stay, and shared his signature scramble recipe that his nephew Andrew named "Egg Mess":
In a skillet with olive oil, sautee garlic, onions and cubed potatoes until caramelized and soft. Add some greens like spinach or broccoli, sliced jalapenos, sweet peppers and mushrooms. When everything is soft, eggs are cracked gently over the top. Be sure to keep the yolks whole and add a dusting of spices. Cover with a lid until egg whites are almost cooked. Add cubes of sharp cheddar over top and scatter with fresh dill. Once cheese is melted, top with fresh tomato slices and serve with a side of toast and sausage.
*Tim's eggs are brought to him fresh every morning by farmer Mike of "Clucking Good Eggs", organic veggies from local CSA's, spices from Penzey's, bread from Tivoli Bread Company, and sausage from Tivoli's North Wind Farm.
