Sweet and Spicy Pumpkin Seeds

makes 1 cup

 

1 cup fresh pumpkin seeds, cleaned and dried

2 teaspoons vegetable oil 

2 tablespoons granulated white sugar

1/8 teaspoon creole seasoning
1/8 teaspoon cinnamon

1/8 teaspoon fine grained sea salt
4 cups water
pinch of cayenne pepper

Preheat oven to 350º F. 

In a small saucepan combine seeds and water, add salt to taste. Bring to a boil and the let simmer for 10 minutes. Meanwhile in a small bowl combine sugar, creole seasoning, cinnamon, salt and cayenne pepper.

Remove seeds from heat and drain. Spread out on paper towels making sure that they are completely dry.

On a baking sheet, toss seeds, oil and spice sugar mix; spreading the seeds out evenly. Bake on the top rack until the seeds begin to brown, 20-25 minutes. Allow seeds to cool before eating.
